How far can you make your potatoes go?

Potatoes and are great, aren’t they?



This bowl of chips was made from one modest baking potato.

Yes, that is one potato and one potato only!

It fed two hungry tummies in only 20 minutes by following the Chips and Wedges recipe in Save Your Stomach. We added just a touch of chilli powder for extra bite, because we like things spicy. Can’t beat that!


We’ve also found that a bag of new potatoes can do four portions of mini potato wedges for as little as a £1!

Quesadilla Cure

Hi there everyone!

By now everyone has settled into uni, and, being first years, were still partying hard and drinking long through the night. Most of my flatmates survive off ready meals and junk food, and they are starting to see the negatives. Sure, it’s quick and easy – good for when you need a quick meal before hitting the town or to sober up a bit – but I’ve seen them gain weight, have virtually no energy and struggle to sleep… serious drawbacks, in my opinion!

I have been using my copy of Save Your Stomach, which has loads of really quick meals – which are usually cheaper and quicker than some of my housemates’ ready meals! I particularly like Pizza On Toast, as you can’t go wrong with ketchup :-)

When we went out to a Mexican restaurant, I ordered Quesadilla, and was inspired to adapt the Pizza On Toast principle to make something similar. Instead of bread, ketchup and left overs, I used a tortilla, cheese and left overs. I filled half the tortilla with cheese, and whatever I had around in the cupboard– a bit of ham, chicken, sour cream etc. I then folded the tortilla in half over the filling, squidged it together, cut it into 3 pieces and fried it for a couple of minutes of each side. You could grill it I suppose, but if you do fry it you don’t need very much oil at all, so grilling isn’t that much healthier. It isn’t completely authentic Mexican… but if you like the Pizza On Toast and want to branch out a bit, this is a quick variation.

Burgers!

A new Save Your Stomach cook recently sent me this picture of his attempt at home made burgers with vegetable stirfry….

He explained:

“They tasted great!  But when I was making them it was really difficult to get them to stay together.  I did fiddle with the recipe a bit though… I added herbs and some grated onion.  How can I make them stick together a bit better next time?”

Adding things to this recipe (onions, herbs, garlic, chillies etc) is absolutely fine, so that wasn’t the cause of the problem.  What you need to make sure is that the mixture is wet enough to bind together,  but not too wet so it become really sticky when you try to shape it.  You can either add a bit more egg, or some water or milk to get the right consistency.  I would then say that judging from the picture, you have tried to make your burgers too big and flat.  Take a bit of the mixture and roll it into a ball, then flatten it into a patty so that it keeps its shape.

I recently tried this recipe using turkey mince – which is usually cheaper again than beef or lamb mince.   I did use a bit of twist though:  I crumbled some stale bread to make breadcrumbs and mixed in some herbs, then pressed the burgers into this mixture to give them a crispy crust.  It worked really well! :-)

Getting Ready

So, you’ve recovered from the post-results hangover and now you’re frantically packing and sorting everything out ready to head to Uni.  Whether you’re excited, nervous or completely terrified, in about 2 weeks time you will be venturing out into the academic world.

My tip for those few short weeks is this: practice.  Practice cooking that is!

It is far easier to get a couple of staple recipes under your belt when you’re cooking the familiar surroundings of your own home.  This also encourages you to cook tidily and clean up after you, as I doubt mum will allow you to trash the place and leave it, and your future flatmates won’t like you for doing so either!

So, get your copy of Save Your Stomach and pick a couple of recipes you would like to master before you go and practice them.  You might want to go for simple things that you think you might be able to manage either whilst drunk, or whilst hungover, or whilst suffering from the obligatory Freshers ‘Flu.

Sneak Preview

We are really excited about the forthcoming online launch of the new publication from Tilsmere: Save Your Stomach.

Save Your Stomach is a specially designed cook book for students, by a student.  It features an easy-to-follow flowchart design to help even the most useless cook, together with flexible, healthy cheap and tasty recipes.  From firm favourites like spag bog through to ingenious inventions that use up odds and ends when you run out of cash… Save Your Stomach has it all! Author and perpetual student Kirsty McGill has also included practical tips for storage and hygiene in student digs.

We will be providing online support student chefs using Save Your Stomach through this blog, Twitter and Facebook, so you’re never far away from a helping hand if you get stuck.  There will be short video demos, handy hints and lots of lush photos of things to try.

But that is all yet to come.
